Creamy Corn Casserole
We made this with our Christmas dinner this year. I wanted something "new" to try; something southern. This family loved it, and it was easy!! The older girls brought a dish of it to a Christmas party later that night.
Ingredients:
1 (15oz) can cream style corn
1 (15 ox) can sweet corn - drained
2 tbsp granulated sugar
1 stick (1/2 cup) butter - softened
1 (8ox) sour cream
2 large eggs - slightly beaten
1 (8.5) oz box Jiffy cornbread mix
Salt to taste
Instructions:
1. Preheat oven to 350 degrees F
2. Mix everything form corn - eggs together.
3. Add 1 box Jiffy cornbread mix and stir.
4. Bake in a lightly greased 9 x 13 pan for 20-35 minutes until the mixture has set. It may still be slightly jiggly, but that okay!
Prep Time - 5 mins
Cook Time - 35 mins
Total Time - 40 mins
