My (Early) Mother's Day Gift

I was practical this year.

I asked for my door to be repainted and have a new lock set added.

(My hubby is talented and awesome!)

I am SOOOO happy with how it turned out!

Something had started to oxidize on it over the winter.  It was totally in need of a face lift.

The first step was to sand it.


Then David took it down and hung a "temp" up for the day.  (We were home all day, so it was safe.)


He primed it.


Then he painted it with three coats of the main color.  It dried quickly outside (the weather was perfect for this).  He used his fancy sprayer (have no idea what type it is except it's a fancy one).

I am just so pleased with the final look!


David and the kids had suggested a navy-ish color, but I didn't want navy.  When I went outside, I saw my throw pillow on the bench and knew right away that was the blue we were looking for.

What's for Sunday Dinner?

It's currently sunny and 82 degrees out.  Just gorgeous!

I sat and watched David plant his garden while the dinner was cooking in the crock pot.  I love crock pot recipes!  Sunday afternoon is for rest and relaxing, and I am all for that.

Today's Sunday dinner consisted of a Greek salad ::


There was Crock Pot Turkey & Stuffing Sandwiches for the main entree ::



And for dessert, Miss Ester and Clementine whipped up some yummy Hello Dolly Bars ::


Easy.  Delicious.  Satisfying. 

As the weather continues to warm and days grow longer (I love this time of year), our Sunday dinner will grow less time-consuming.  The older I age, the more I realize that it is all about collecting memories (and I cannot do that while in the kitchen all day).  Bon Appetit!

Vitamin Sea - Daybook Post 2018

Outside my (truck) window ~


A couple of weeks ago, David and I took a little road trip with Miss Clementine.  (The older four are all schooling still so they did not go.)

We left early on a Sunday morning and drove down to Padre Beach (the northern tip of Padre Island), just across from Corpus Christi.



David's goal was to fish.  Clementine and I had our own agenda.


I am thankful for (so many things) ~

*  David's successful fishing trip!  Hugely, unnaturally successful.


(David reeled in over 30 fish total - including 10 small sharks, which he released.)

*  Thankful that Miss Clementine had the awesome opportunity to reel in 2 little sharks! Ha ha!

Have I mentioned hugely, unnaturally successful?!

*  Thankful that Clementine wasn't in the water when this black tipped shark was reeled in by some man on the pier.  Yikes!




* Thankful for the location of the fishing pier right on the beach and next to the first camp ground we stayed at.  It was a beautiful place to explore for Clementine and I.


From the school room ~

Art class consisted of drawing whatever her little imagination allowed with these adorable pieces of sidewalk chalk (Target $1 bin), and of course science class was a hands-on experience every day :)

Oh my gosh!  I just love a campfire meal.  Our breakfasts were so delicious and filling!  For lunch, we ended up dining out around mid-afternoon.

What I read before our trip ~


It's such a great book to pick up when you don't have a lot time and/or you need a quick fill on God-filled moments.  All true stories.


What I read during our trip ~



This!!!!!  Wow!  Wow!  Wow!  This historical fiction was, well, let's just say I couldn't put it down till I found out what happened to the characters.  Powerful!  Here's a review I found online that accurately sums it up.

Around our house campground ~

Day 2 of our trip had us driving further down Padre Island (which is 113 miles long) to the front door of  Padre Island National Seashore.




This national park is the longest stretch of undeveloped barrier island in the world!

We played while Daddy fished.


Three times David cast his bait net and brought in a bunch of fish!  It was like a Jesus of Nazareth moment! Ha ha!


I am praying for ~

* the chance to head back down there again soon!

* all those who asked us to pray for them.

Coming down the pike this week ~

In five days, I'll be bringing Sarah back for the summer - already!!  Her first year in college has flown by so incredibly fast.

Day 3 of our trip found us implementing Plan B since the weather turned crazy windy.

We decided to head inland via the ferry and look for dolphins.


*This route took us back up to Port Aransas (where we vacationed for a week last May).  It was so sad to see the devastation left behind from Hurricane Harvey.  The recovery is still going on and will be for a couple of years.*

We decided to camp at one of our favorite state parks near the San Antonio river.  That was a different kind of beach - ha ha!  Swollen and muddy!


We drove into town for ice cream, a historical town where they pave the roads around the ancient Live Oak trees.

Day 4 had us packing up and heading for home, swinging by to pick up Sarah (who had a four-day weekend).

I am so grateful for this little camping trip, spending time with David and our "grandchild".  Yes, I was asked if I was the granny - hahaha! 

I love the beach and the ocean, and God's creation never ceases to amaze me.  It is really humbling when you are standing there, looking out at sea and realizing that you are just a grain of sand.  It's a great big world and I am so grateful to see the parts that I have seen.

What's for Sunday Dinner?

Wowzer!

I canNOT recall the last time I wrote one of my Sunday Dinner posts without having to look it up on my blog. After driving Sarah back to school yesterday (she was home for a doctor's appointment on a 4-day weekend), I made sure to have a crock pot meal ready to go in order to keep things easy on everybody, and as I was eating my dinner last evening, that's when it hit me.  I need to blog about food again.

I used this simple Crock Pot Beef Stew meal.  It'll probably be the last time I use it until the fall.


I tend to go with the McCormick Crock Pot beef stew mix and add some carrots and potatoes to it.  So good!

For dessert, I had Miss Mabel make a Strawberry and Cream Cake for dessert.


And after I post this picture, I realize I forgot to make and add the strawberries to it! Ha!  (It still tasted good though.)

So grateful for food, let alone delicious food. 

God is good!

Tuscan Pasta Salad

My older daughters and I decided to switch up the menu when we saw Gnocchi Mac & Cheese down for Friday's dinner (we try to keep our Fridays meatless - a traditional day of penance in the Catholic Church).   The Gnocchi Mac & Cheese is delicious, but we all had healthier eating on the brain.  Instead, we opted for a Tuscan Pasta Salad with Italian garlic bread.  It made for a delicious and light dinner!

Tuscan Pasta Salad 


Ingredients - Salad ::
16 ounce bow tie pasta, cooked and then drained in cold water
(1) 7 ounce jar sun-dried tomatoes in oil, drained
(1) red bell pepper, diced
(1) 6.5 ounce can sliced olives, drained
1 cup spinach, chopped
1/4 cup basil, chopped
1/2 cup grated Parmesan cheese

Ingredients - Dressing ::
3/4 cup olive oil
2 tbsp white vinegar
2 tbsp water
1 tsp salt
1 tsp sugar
1 tsp dry oregano
1 tsp dry basil
1 clove garlic
black pepper to taste

Directions ::
1.  In a large bowl, combine pasta, sun dried tomatoes, bell pepper, olives, spinach, basil, and Parmesan cheese.  Toss until combined.

2.  To make the dressing: in a small bowl, whisk olive oil, vinegar, water, salt, sugar, oregano, basil, garlic, and salt & pepper.

3.  Drizzle the dressing over the pasta salad and serve.

Prep time: 20 minutes
Serves: 8

My Favorite Book Tote

I have a lot of reading projects going on.  At the beginning of the year, my sister encouraged me to a reading challenge (Bible and Catechism of the Catholic Church in one year).  I also set a goal to read two novels a month (I keep tabs of what I have read on Goodreads).   Throw in a couple of group reading projects as well, and gosh!  I really needed to organize myself.

Last fall, a friend told me about this cute tote from Thirty-One bags.  She uses a couple in her house and is quite pleased.  So I gave it a try.  (The available patterns for this tote change depending on the season.)



This is not a reimbursed endorsement of any kind.  It is a product that I really like and just wanted to share with y'all.

With two roomy compartments inside, I am able to put many items into this tote.

Let's see...

Inside one of the compartments, I store my colored pencils and markers/highlighters.  I use them for my daily planner.  (I fill the inside of the planner in with color and doodling but not so much the cover of the planner.)


This is my favorite daily planner.  Hands down.  It can be found over at Catholic Sistas and is worth ever. single. penny.


My Kindle is kept in my tote as well.  It's an old one, but still works.


There's room for my Bible.


It is very important to be using a Catholic Bible, especially if you are Catholic.  The Catholic Bible includes the New Testament and Old Testament and several books excluded by the Protestants.

Bibles make great gifts for children, teens, and adults.  Catholic Bibles editions include the following: The New American Bible (NAB), Revived Standard Version - Catholic Edition (RSV-CE), Douay Rhimes (the earliest translation from the Original Latin), and the Navarre Bible.

My Catechism of the Catholic Church is too large to put in my tote.  It's an original edition, a gift from my in-laws (when David and I just started dating - pretty intuitive I thought).

When praying a novena, I keep this little nugget tucked inside as well ::



You will currently find, Stories of Grace, inside.  I am participating in a 31 day Bible/book study using using it (based on the parables of Jesus).


You can find beautiful book studies over at, Take Up & Read.  They have an amazing online community and offer a an email subscription as well.

Each side of the tote has a set of pockets in which I store pencils, pens, sharpener, ear buds, and chords & chargers.



The tote is sturdy and easy to carry.  The only negative thing I found is that the balance can be thrown off causing the tote to tip, but by shifting books (weight) around, that issue can be easily remedied.

I love having everything in one place, right at my fingertips.  It's a perfect tote if you have kids in sports and you are sitting around waiting for practice to get over.  On road trips, just grab and go.  It is so convenient.

Lastly, how I use my tote isn't necessarily how you have to use it.  And with all the different patterns available, the possibilities are endless.
